Skimming is a white-collar crime in which a person takes cash from the daily receipts of a business, or from any cash transaction involving a third interested party, and reports a lower total to government authorities than was actually received. Its formal legal term is defalcation, and it is distinct from the device-based capture of payment card data known as card skimming.
